Energy Bites are my very favorite thing to make. They are essentially no bake cookies that are rolled up in a ball shape and made with healthy ingrediants. They tend to be higher in calories (energy) than your average cookie too. I use them to fuel my longer rows and workouts.
I cannot take any credit for these two recipes. I did not create these energy bites, but I do make them often. The wonderful Navitas Organics are the creaters. (Hint: if you want the very best snacks and ingredients Navitas is the best.) Enjoy!
Almond Cacao Energy Bites
1 cup Almond Butter
2 tbsp Coconut Oil, liquefied
2 tbsp Coconut Butter
2 tbsp Apricot Jam
1/2 tsp Salt
1 cup Rolled Oats
1 scoop Navitas Organics Cacao & Greens Essential Blend
1/4 cup Ground Flaxseed
1/4 cup Navitas Organics Cacao Nibs (coarsely chopped)
Coconut Shreds or Dark Chocolate for topping
Combine almond butter, coconut oil, coconut butter, jam and salt in a bowl.
Mix in oats, Essential Blend, flaxseed and Cacao Nibs until a dough has formed.
Using a 1 tbsp scoop, portion out the dough and roll into small balls with your hands.
If desired, roll in coconut shreds or drizzle with melted dark chocolate.
Refrigerate until firm and enjoy! Makes 24 – 26 energy bites
Cinnamon Chia Energy Bites
6 Medjool Dates, pitted
2 Tbsp Navitas Organics Chia Seeds + 1 Tbsp for topping
1 cup Navitas Organics Cashews
1/2 cup Shredded, Unsweetened Coconut + 1/4 cup for topping
1 tsp Ceylon Cinnamon + 1/4 tsp for topping
½ tsp Vanilla Extract
1/8 tsp pink Himalayan Sea Salt
Mix additional ingredients in one small mixing bowl to be used for the topping (1/4 cup shredded coconut, 1 Tbsp Chia Seeds, 1/4 tsp Ceylon cinnamon) and set aside.
Chop the dates and Cashews into small pieces.
Add dates, Cashews and all other ingredients to large mixing bowl.
Using one hand, slowly mix all ingredients together using a kneading motion until evenly mixed (about 3 minutes). Add 1 tsp of water if needed to get the last bits to stick together (this helps make things a little stickier).
Roll mixture into 12 small balls between palms of hands and lightly coat each ball with additional topping until evenly coated, rolling between palms.
Store in the refrigerator in an airtight glass container for up to one week. Makes 12 Bites
